Pucce Salentine
The Salento pucce were prepared with the few ingredients available at home and consumed in the fields during the heavy working days.
The pucce are a puffed bread roll (without crumb) of typical durum wheat flour.
You can prepare them with the addition of black olives (strictly not pitted) or empty.
The dimensions are of a round sandwich that is then stuffed at will: vegetables, salami, shrimp, cheeses.
The “Puccia caddhipulina” is a variant of the puccia and is prepared in the town of Gallipoli on December 7th, the eve of the feast for the Immaculate Conception.
